Lion's Mane Mushroom Soup

This comforting soup is perfect for chilly days and showcases the mushroom's flavor beautifully.

 

Ingredients:

  • 2 cups Lion's Mane mushroom, chopped
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh herbs for garnish

 

Instructions:

  1. Sauté onion and garlic in olive oil until softened. Add the chopped Lion’s Mane and cook for another 5 minutes.
  2. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  3. Blend the soup until smooth and stir in coconut milk. Season with salt and pepper before serving.
